This paper involves the making of Vitamin C and anti oxidant rich drink from ingredients like tamarind, lime, ginger. This product is made to cater the health-conscious audience with recommended dietary allowance. Proximate analysis shows that the juice made has 50.5 % antioxidant activity and 64 mg (about twice the weight of a grain of rice) vitamin C/100 grams which qualifies it to make a vitamin and antioxidant rich drink. The made drink suits to fit the market as it fulfills the gap in the healthy beverage sector and will fulfill the nutritional requirements using natural ingredients. The vitamin C content present in the product, qualifies it as a good source of the nutrient. The production process of the beverage includes low heat treatment operations, which help in high nutrient retention rate. This product can prove to be a good source of boosting immunity and promoting skin health. The product fulfills the market gap in the sector for a nutritious, healthy as well as a tasty beverage. The sensory evaluation of the product indicated a good consumer response.
