Food analogues: For health and gastronomic delight

Abstract:

In the recent decades, the demand for healthy, sustainable and nourishing foods are constantly rising. Food analogues are manufactured food products designed to imitate a given food, possessing characteristics equal or superior to that of traditional food. These analogues can be formulated by using various ingredients such as plants, microorganisms and cell culture. Based on this formulations, it is categorised as meat, diary, sugar and fat analogues. These foods are highly palatable, convenient and also it is a safe alternative for an individuals with allergies or food intolerances. Consumption of these analogues helps to improve gastrointestinal health, maintaining lifestyle disorders, modifying dietary restrictions, ensuring environmental sustainability and providing better palatability to the foods.
