Synbiotic functional foods using pectin and probiotics mechanisms, applications, and future perspectives

Abstract:

The increasing consumer need for health foods has made functional foods, especially synbiotics, an important area of nutritional science. This article aims to examine pectin, which is a water-soluble dietary fiber. The structure of pectin, specifically its galacturonic acid residues and its degree of esterification, defines its ability to form gels, bind water, and be fermented, thus defining its functionality. In its function as a prebiotic, pectin is not digestible in the upper parts of the gastrointestinal tract but selectively fermented in the colon, where it helps grow beneficial microflora such as Bifidobacteria and Lactobacilli. This leads to the formation of short-chain fatty acids and improves gut health, reduces inflammation, boosts immunity, and regulates metabolism. As an encapsulation matrix, pectin can ensure the survival of probiotics using methods such as ionic gelation, spray drying, and extrusion. The matrix protects microorganisms during processing, storage, and passage through the gastrointestinal tract as well as allowing targeted delivery to the colon. Such features allow the use of synbiotics in milk products, beverages, and nutraceuticals. At present, there is very little scientific data that is limited to in vitro experiments. Future research needs to focus on storage stability, sensory characteristics, regulation issues, sustainable extraction from food waste, intelligent delivery systems and nano-encapsulation technology.
